If you’re looking for a healthier alternative to cakes and sweet breads, this may be the recipe for you! It’s easier to make than actual bread, and is just as delicious— if not more so. The sweet potato is a great substitute for flour, and trust me: you won’t even taste it.

Boil sweet potato until they are softened and easy to peel. Peel and mash, and make sure there are no chunks. Feel free to throw it in the blender, too! Then, melt the butter.
Mix together mashed sweet potatoes, butter, the egg, milk, sugar, and the vanilla in a large bowl. These are the wet ingredients.
In another bowl, mix the remaining ingredients, excluding the chocolate chips.
Combine dry ingredients with wet ingredients. The batter should be soft but not runny. If your batter is sticky, add more milk until the consistency is to your liking.
Place in the oven at 355 F for about 45-55 minutes, or until the top has cracked and a toothpick comes out clean. Enjoy!
