Who doesn’t love a crêpe? Savory or sweet, you instantly feel special when someone has taken the time to lovingly make each one. This recipe is for dessert crêpes. No one will be able to resist crêpes stuffed with chocolate ganache, fresh strawberries and bananas and topped with powdered sugar and whipped cream. This dessert can make a week-night feel like a special occasion.
You can use any type of chocolate but semi-sweet gives a perfect amount of sweetness that will complement the strawberries and bananas.
If you want to skip making the chocolate ganache, you can use a chocolate hazelnut spread like Nutella instead.
Chocolate Ganache Step 1: Put the chocolate pieces into a large bowl. Set aside.
Chocolate Ganache Step 2: In a pan over low heat, warm up the cream until it begins to simmer. Stir often, making sure that it doesn’t scald or boil.
Chocolate Ganache Step 3: Pour the cream over the chocolate and gently stir together with a rubber spatula until the cream and the chocolate are completely incorporated.
Crepes Step 1: In a large bowl, whisk together the eggs, flour, milk, salt, sugar, butter and vanilla. Whisk until smooth.
Crepes Step 2: Heat a medium-sized skillet or crepe pan over low heat. Using a pastry brush, add a thin sheen of butter to the skillet.
Crepes Step 3: Add a scant ¼ cup of crêpe batter to the skillet. Immediately pick up the skillet and swirl the batter around so the bottom of the skillet is covered by the batter. Gently cook the crêpe. When the edges of the crêpe become lacy, after about 1-2 minutes, flip the crêpe and continue cooking the other side until golden brown.
Crepes Step 4: Set the crêpe aside on a waiting plate, continue the process for the other crepes.
Assembling Crepes Step 1: Strawberry, Banana and Chocolate Crêpes: (8 crêpes ganache) Chocolate ganache, Strawberries, hulled and sliced, Bananas, peeled and sliced into rounds, Powdered sugar, Whipped cream.
Assembling Crepes Step 2: Take one crepe and add a generous stripe of chocolate ganache down the middle. Scatter strawberries and bananas over the ganache. Fold one third of the crêpe over the fruit and fold the other side of the crêpe onto the first third.
Assembling Crepes Step 3: Sprinkle the crêpe with powdered sugar. Add a small dollop of whipped cream in the center.
Whether you serve your crêpes with a hot cup of coffee or with a flute of champagne, they will make your home feel like a French bistro.
