Using your slow cooker for this beef stew recipe will give you plenty of time to focus on other important things during your day. When it comes time to sit down for dinner, you’ll have a warm meal that will satisfy your taste buds. A lot of these ingredients are things you may have in your pantry already, and it’s quick to prepare.
Turn your slow cooker onto low before you start to prepare the ingredients.
Olive Oil: Drizzle a little bit of olive oil into the bottom of the slow cooker.
Onion: Peel, and chop your onion into large chunks, rather than dicing it into small pieces. Place the onion pieces onto the bottom of the slow cooker.
Beef: Place the stew beef cubes in the slow cooker on top of the onions.
Carrots: Peel, wash and chop the carrots. You should keep them in larger pieces. Place them into the slow cooker.
Potatoes: Thoroughly wash approximately ½ pound of baby potatoes. Any variety works. If they’re on the larger side, it’s a good idea to slice them in half before placing them in the slow cooker.
Broth: Pour the beef broth over the entire mixture in the slow cooker.
Salt and pepper: Season the mixture with salt and pepper.
Thyme: Place 1/4 teaspoon of thyme into the slow cooker.
Garlic: Place 1/8 teaspoon of garlic powder into the slow cooker.
Flour: Measure out 1 tablespoon of flour into the mixture.
Allow to slow cook for 8 hours. Recipe is ready when the carrots are soft.
You can serve this meal with a warm loaf of bread and butter. The bread is perfect for mopping up the extra juices. Depending on your ingredients and how much moisture they’re holding, you may find your final product is not quite as thick as you would like. You can take some of the liquid out to form a thicker roux that can be added back in, but you can also remove a little of the liquid. Replace it with a container of your favorite store-bought gravy.
