After all the ingredients have been added, bring the soup to a low rolling boil for 1 minute. Then reduce cooking heat to medium-low. Cook for 20 more minutes. Add in 2 cups of water as needed, to maintain a liquid soup consistency. If the ingredients begin to absorb the chicken stock and solidify, simply keep adding water. Depending on your cook-top and where you live, you may not need to add in much water, if any. Finally, add salt and pepper to taste, and stir. Total cook time should be 40 minutes or until the chicken and carrots are tender and can be easily cut with a fork. Reduce the heat to low to keep warm.

Ingredient: 64 oz of Chicken broth Ingredient Directions: Fill a large stockpot with 64 oz of chicken broth. Bring to a simmer on medium heat with the lid on.

Step 2

Ingredient: 4 cloves of Garlic, 1/4 cup of cilantro, 3 tbsp of ginger Ingredient Directions: Mince the 4 garlic cloves and 1/4 bunch of cilantro. Mix with the 3 tbsp of ginger paste. Add these ingredients together to the cooking chicken broth.

Ingredient: 6 Boneless, Skinless, chicken breasts Ingredient Directions: Cut 6 chicken breasts into bite-sized pieces, removing any excess fat. Wash to remove additional fat or skin remnants needed. Add the chicken breast pieces to the broth pot and reduce the heat to medium-low.

Step 4

Ingredients: Vegetables (5 carrots, 1 onion, 2 stalks of celery) Ingredient Directions: Chop up 5 carrots, 1 onion, and 2 stalks of celery. Add them to the simmering pot. Stir broth, chicken, and vegetables frequently to prevent these ingredients from settling at the bottom of the pot or sticking.

Ingredients: 2 tbsp honey, 2 tbsp lemon juice, 2 tbsp lime juice Ingredient Directions: Now, add 2 tbsp of honey, 1 tbsp of lemon juice, and 2 tbsp of lime juice in with the other ingredients.

Serving Suggestions
