Egg, Cheese & Bacon Breakfast Muffins

These versatile breakfast muffins are a great way to start your morning. You may be thinking about those high carb, overly sweet muffins that have way too much sugar in them. These are egg based, and you can add a variety of ingredients that make them taste great. Choose sausage, all kinds of veggies, cheeses and even potatoes to round out this breakfast and brunch item for during the week or even for a brunch event.



Spray a muffin tin with canola or olive oil cooking spray. Fill each muffin cup approximately ¾ full of the egg mixture. Bake at 350 degrees for about 20 minutes or until the eggs look cooked to perfection. The edges will start to look a bit brown and the centers will be set.

Eggs: Crack eggs into a bowl and whisk them together with the milk.

Step 2

Milk: Milk should be added to the egg mixture. Whisk the ingredients together.

Step 3

Cheese: The shredded cheese should be added right into the egg mixture. Stir it slightly to properly combine.

Step 4

Meat: You need to precook the meat of your choice and add it directly to the egg mixture once it has cooled down a bit. You can cook the meat ahead of time to save time. You can also purchase precooked bacon, sausage, ham, etc.

Step 5

Salt: Add ¼ teaspoon salt to the egg mixture.

Step 6

Pepper: Add ¼ teaspoon pepper to your egg mixture.

Step 7

Green Onion: Finely slice green onion and sprinkle them on top of the egg muffins before cooking them. You can save some for the side as well.

Serving Suggestions

You’ll want to serve these muffins right out of the oven. They cool down quickly, but they make a great food for on-the-go if you have to head out of the door quickly. You can make them ahead and heat them in the microwave for a few seconds. You can serve with toppings such as salsa, extra cheese or even a creamy hollandaise sauce.
