Add 1/4 cup of bread flour to a small saucepan
With stirring add 1/2 cup water slowly to the flour and cook out until a paste is achieved
Let the paste cool to room temperature
In the meantime heat 1/2 - 3/4 cup of milk to 100 degrees F either on the stove or in a microwave
In a mixing bowl, add one packet of active dry yeast (=2 1/4 tsp) to the warmed milk with a tablespoon of sugar and let the mixture sit for about ten minutes so it becomes foamy
Add 1/4 cup granulated sugar, 1 tsp salt, and the flour paste from earlier into the bowl and mix to combine
Add 2 1/2 cups of bread flour to the mix and knead for about 10 minutes
Add 2-3 tbsp of butter to the dough and knead for about one more minute
Grease a bowl, then transfer dough into the greased bowl and allow it to prove covered in a warm place for an hour to one and half hours - it should double in volume
On a lightly floured or oiled surface, divide the dough into three balls
With a rolling pin, roll out each ball of dough until it is a quarter of an inch thick
Spread a tbsp of softened butter onto each ball of dough, then top with sweetened, toasted coconut
Take one end of the dough and roll it towards you to get a rolled log (like a cinnamon roll). Cut the log down the long way, leaving an inch at the top. Braid the loose ends together and pinch the bottom loose ends together. Then pinch the intact end to the newly joined ends to form a circle
Line a baking sheet with parchment paper
Preheat oven to 350 degrees
Place all three breads onto baking sheet. Cover them with plastic wrap and allow to prove for half an hour
Once oven has preheated, place sheet into oven to bake for 20-25 minutes. Bread should have an internal temperature of 200 degrees.
*Optional: brush with breads with honey and milk every five minutes
Cool for five minutes and dig-in.
