Anytime Chocolate Chip and Oat Cookies Recipe

If cookies could be healthy, this chocolate chip and oat cookie recipe is the closest thing to it. You can use whole grains, pumpkin seeds and healthy oats to create a chewy cookie that your whole family will love. It’s also really easy to prepare ahead of time, freeze and then bake when you need a few quick cookies for a craving or some unexpected company.



Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.

Step 1

Butter: Microwave the butter until the butter has softened or pull it out of the refrigerator ahead of time so it starts to soften.

Step 2

Brown sugar: Add the sugar to the bowl. Use a stand mixer or hand mixer to combine the butter and sugar.

Step 3

Eggs: Add two eggs to the mixture. Mix together.

Step 4

Flour: Add both flour varieties to a mixing bowl.

Step 5

Baking of soda: Add one teaspoon baking soda to the mixture.

Step 6

Vanilla: Add one tablespoon vanilla to the bowl.

Step 7

Salt: Add one teaspoon salt to the mixture.

Step 8

Walnuts: Mix in ½ cup of chopped walnuts.

Step 9

Pumpkin seeds: Gently mix in ½ cup of pumpkin seeds.

Step 10

Oats: Add in 1 cup of oats. Mix together thoroughly to form a dough that can easily be formed into balls.

Step 11

Chocolate chips: The chocolate chips should be added to the dough at the very end. Hand mix them, so they are gently folded into the dough.

Step 12

Form the cookie dough into 1” balls by rolling them in your hands. Place them on the cookie sheet a couple of inches apart. Bake at 350 degrees until the edges look brown and firm. The underside of the cookies should just be golden brown. Remove them from the baking sheet so they don’t continue to cook on the hot pan.

Serving Suggestions

You can also add in a ½ cup of coconut flakes if you would like an even chewier texture white a bit of a bite. Flax seeds are another healthy addition that you won’t even be able to tell are in these cookies, but there will be added health benefits.
