  • Two cups of all-purpose flour
  • ¾ cup of white sugar
  • Four teaspoons of baking powder
  • ½ teaspoon of salt
  • ¾ cup of vegan margarine
  • 1 zested and juiced lemon
  • ½ cup of soy milk
  • Two tablespoons of poppy seeds
  • ½ cup of water

Sift together the flour, sugar, baking powder and salt. Cut in the margarine until the dough is grainy. Mix in the poppy seeds and lemon juice and zest. Combine the water and milk together and add to the dough gradually, stirring to create a biscuit dough. Spoon ¼ teaspoon dollops onto a greased baking pan and bake for 10 to 15 minutes.

Savory Scrambled Tofu:

  • One bunch of chopped onions
  • One tablespoon of olive oil
  • 1 14.5-ounce can of peeled and diced tomatoes in juice
  • 1 12-ounce package of drained and mashed silken tofu
  • ½ cup of vegan cheddar cheese
  • Salt and pepper
  • Ground turmeric to taste

Sauté the onions in heated olive oil until translucent. Stir in the tofu and tomatoes with their juice and cook until browned and warmed. Season with the turmeric, salt, and pepper and top with the grated cheese.

Spicy Couscous with Dates:

  • One tablespoon of olive oil
  • One medium chopped onion
  • Two whole star of anise pods
  • Three garlic cloves
  • ½ chopped red bell pepper
  • Two diced dried hot peppers
  • Four large chopped mushrooms
  • ½ teaspoon of black pepper
  • One tablespoon of lemon juice
  • ¼ cup of chopped dates
  • One teaspoon of cinnamon
  • 1.5 cups of vegetable stock
  • One cup of uncooked couscous
  • Salt to taste

Sauté the onion until tender and add the anise pods and salt. Stir in the garlic, red bell pepper, dried peppers, and black pepper. Cook until tender. Stir in the mushrooms, lemon juice, dates, and cinnamon, cook for 10 minutes. Add couscous and vegetable stock, cooking on low heat for three to five minutes until the couscous is tender and moisture has been absorbed.

Quinoa Black Bean Tacos:

  • One tablespoon of olive oil
  • One chopped onion
  • Two eight-ounce cans of tomato sauce
  • 1.5 cups of water
  • ½ cup of quinoa
  • 2 14.5 cans of black beans, drained and rinsed
  • One pack of taco seasoning
  • 24 corn tortillas

Brown the onions in olive oil. Add in the tomato sauce, water, quinoa and taco seasoning and boil. Reduce the heat and cover until the quinoa is tender. Add the black beans and simmer for five minutes. Serve in warmed corn tortillas.
